Tofu Paneer Masala Dosa Recipe

Ingredients

For the Dosa Batter:

  • 2 cups rice
  • ½ cup urad dal (black gram)
  • 1 tsp fenugreek seeds
  • Water for soaking and grinding
  • Salt to taste

For the Tofu Paneer Masala Filling:

  • 200 g Vinamis Tofu (firm, silken, or fried—your choice)
  • 2 tbsp oil (coconut or sunflower works great)
  • 1 tsp mustard seeds
  • A few curry leaves
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 tsp ginger-garlic paste
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander for garnish

Instructions

Step 1: Prepare the Dosa Batter

  1. Soak rice, urad dal, and fenugreek seeds in water for 4–5 hours.
  2. Grind into a smooth batter, adding water gradually.
  3. Let it ferment overnight or for 8 hours. Add salt just before making dosas.

Step 2: Make the Tofu Paneer Masala Filling

  1. Choose Your Tofu Style:

    • Firm Tofu: Great for a creamy, paneer-like texture.
    • Silken Tofu: Perfect if you like a melt-in-your-mouth filling.
    • Fried Tofu: Adds a crispy, nutty layer to your dosa game.
  2. Cook the Masala:

    • Heat oil in a pan and splutter mustard seeds. Add curry leaves for aroma.
    • Toss in onions and sauté until golden. Add ginger-garlic paste and sauté for another minute.
    • Stir in tomatoes and cook until mushy. Add turmeric, red chili powder, and garam masala.
  3. Add Tofu: Crumble the tofu and mix it into the masala. Cook for 5 minutes, allowing it to soak in the spices. Add salt to taste. Garnish with coriander leaves.

Step 3: Assemble the Dosa

  1. Heat a dosa tawa and spread a ladleful of batter in a thin, circular motion.
  2. Drizzle a few drops of oil and cook until crispy and golden.
  3. Place a generous scoop of the tofu masala filling in the center. Fold the dosa, and serve hot with chutney and sambar.
